Pineapple Shrimp  Salad

Ingredients

Salad

  • 1 lb large shrimp, peeled and deveined
  • 6 cups mixed salad greens
  • 1 cup fresh pineapple chunks
  • 1 cup red cabbage, shredded
  • 1 red bell pepper, thinly sliced
  • ½ cup cucumber, sliced
  • ¼ cup red onion, thinly sliced
  • 2 tablespoons toasted almonds
  • 2 tablespoons green onions, chopped

Dressing

  • ½ cup Tropics Pineapple Vinaigrette

Directions

  1. Season the shrimp lightly with salt and pepper.
  2. Grill or sauté the shrimp over medium-high heat for 2–3 minutes per side, or until pink and fully cooked. Allow to cool slightly.
  3. In a large bowl, combine the mixed greens, pineapple chunks, red cabbage, bell pepper, cucumber, and red onion.
  4. Add the cooked shrimp and gently toss the ingredients together.
  5. Drizzle with Tropics Pineapple Vinaigrette and toss lightly to coat.
  6. Garnish with toasted almonds and chopped green onions.
  7. Serve immediately and enjoy the fresh tropical flavors of Hawaii.

Serving Suggestion

Pair with grilled fish, garlic bread, or enjoy as a light island-inspired lunch. For extra tropical flavor, add mango slices or avocado.
